Enjoy these nutty vanilla flavored cookies that are baked to perfection - a great dessert to serve at your next party.

Ingredients

cup granulated sugar

cup packed brown sugar

cup butter or margarine, softened

teaspoons vanilla

cups all-purpose flour

teaspoon salt

cup finely chopped nuts

Directions

  • 1 In large bowl, beat granulated sugar, brown sugar, butter, vanilla and eggs with electric mixer on medium speed until well blended, scraping bowl occasionally. On low speed, beat in flour, baking powder and salt until well combined, scraping bowl occasionally. Stir in nuts.
  • 2 Divide dough into 3 equal parts; shape each into roll 1 1/2 inches in diameter. Wrap each roll in plastic wrap; refrigerate until firm, about 2 hours.
  • 3 Heat oven to 425°F. Cut dough into 1/4-inch slices; place 1 inch apart on ungreased cookie sheets.
  • 4 Bake 5 to 7 minutes or until light golden brown. Immediately remove from cookie sheets.
Tips  

Make your own-do-ahead dough. Cookie dough can be stored in the refrigerator for up to 2 weeks or in the freezer for up to 6 weeks. When you want, slice and bake the frozen dough as directed in the recipe.

Coconut Refrigerator Cookies: Add 1 cup coconut with nuts. Lemon or Orange Refrigerator Cookies: Add 1 tablespoon grated lemon or orange peel with flour. Spice Refrigerator Cookies: Add 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg and 1/4 to 1/2 teaspoon ground cloves with flour.
