Ingredients

  • 1 1/2  lb. onions, thinly sliced
  • 3  tablespoons margarine or butter
  • 2  teaspoons sugar
  • 4  cups chicken broth
  • 4  cups beef broth
  • 2  medium potatoes, peeled, cubed
  • 1  (15 1/2-oz.) can Joan of Arc Fancy Great Northern Beans, drained
  • Salt and pepper to taste
  • Dry sherry, if desired
  • Garlic croutons

Directions

  1. In large saucepan over medium-low heat, saute onions in margarine about 10 minutes or until tender. Stir in sugar; cook an additional 20 minutes or until onions are golden brown, stirring frequently. Add chicken broth, beef broth and potatoes; mix well. Bring to a boil. Reduce heat; simmer about 20 minutes or until potatoes are tender. Stir in beans; simmer an additional 5 minutes. Salt and pepper to taste. Stir 1 tablespoon sherry into each bowl of chowder; garnish each with croutons.
