These mini cheesecake cookie cups are perfect for any celebration, big or small!

Ingredients

package (16 oz) Pillsbury™ Ready to Bake!™ refrigerated sugar cookies (24 cookies)
12
oz cream cheese, softened
1 1/2
cups powdered sugar
1 1/2
teaspoons vanilla
1
tablespoon multicolored candy sprinkles

Directions

  • 1 Heat oven to 350°F. Spray 24 mini muffin cups with cooking spray. Place 1 cookie dough round in each muffin cup. Bake 15 to 20 minutes or until light golden brown.
  • 2 Carefully press end of wooden spoon into center of each cookie cup to make 1-inch-wide indentation. Cool completely in pan, about 20 minutes.
  • 3 In large bowl, beat cream cheese, powdered sugar and vanilla with electric mixer on medium speed until smooth.
  • 4 Carefully remove cookie cups from pan. Pipe or spoon cheesecake filling into center of each cup. Top with sprinkles. Store in refrigerator.
Tips  

Substitute Pillsbury™ Ready to Bake!™ refrigerated chocolate chip cookies for the sugar cookies.

If needed, run knife around edges of cookie cups to loosen.
