Scalloped potatoes become a fast and flavorful meal when made with shredded Jack cheese, salsa and black beans.

Ingredients

package (4.9 ounces) Betty Crocker™ scalloped potatoes

cups hot water
2/3
cup milk
1
cup shredded Monterey Jack cheese (4 ounces)
1/3
cup Old El Paso™ salsa (any variety)

cups Progresso™ black beans or red kidney beans (from 19-oz can), drained, rinsed

Directions

  • 1 Heat Potatoes, Sauce Mix, hot water and milk to boiling in 3-quart saucepan or high heat, stirring occasionally.
  • 2 Reduce heat; cover and simmer 17 to 18 minutes, stirring occasionally, until potatoes are tender.
  • 3 Stir in remaining ingredients; heat through.
Tips  

Serve this meatless main dish with a tossed salad and breadsticks. Or serve in smaller amounts as a zesty side dish.

Many interesting salsa flavors are available, with varying levels of spiciness. Be adventurous and heat this up with a spicy new salsa!
