Ingredients

1/2
cup loosely packed fresh mint sprigs
6
black currant tea bags
2
quarts (8 cups) water
Lemon slices, if desired

Directions

  • 1 Place mint springs and tea bags in 2-quart glass jar or pitcher. Add water; cover. Set jar in sun for 6 to 8 hours.
  • 2 To serve, remove mint springs and tea bags from jar. Serve tea over ice with slices of lemon.
Tips  

Mint enhances fruit flavors. Use your favorite fruit tea in place of the black currant tea; try apple or raspberry.

Extra-fine or super-fine sugar is perfect for sweetening drinks because it dissolves more quickly than does standing granulated sugar. And since sugar dissolves better in warm liquids, sweeten the tea before it is refrigerated.

Even beverages can spoil; keep iced tea refrigerated until serving to prevent the growth of microorganisms.
