    Ingredients

    • 3/4 ounce powdered gelatin
    • 1 cup water
    • 3 tsp english breakfast tea
    • 1 1/2 cup sugar
    • 1 cup light corn syrup
    • 1 tsp salt
    • 1 cup powdered sugar

    Directions

    1. 1Heat water, and brew the tea in it for five-ten minutes. You want it to be very strong, dark tea. Place this in the refrigerator to chill.
    2. 2Once your tea has chilled, add 1/2 cup of the chilled tea to the gelatin an the bowl of a stand mixer fit with the whisk attachment and stir gently. Let the gelatin and tea sit undisturbed until you need it.
    3. 3In a medium, heavy-bottom saucepan stir together sugar, remaining tea, corn syrup and salt. Stir over medium heat until sugar is dissolved. Once dissolved, let boil without stirring until it reads between 237 and 240 degrees on a candy thermometer.
    4. 4Turn on stand mixer with gelatin in bowl to a medium low speed. Pour in hot sugar syrup slowly letting it run down the side of the mixer bowl.
    5. 5Adjust mixer to high speed and whip for around ten-twelve minutes. It should be thick, fluffy and creamy. While it is whipping, oil a glass dish for them to set in - a ten by eight dish will make for smaller squares or, if you prefer a larger marshmallow, an eight inch square pan will work fine.
    6. 6When marshmallow is done whipping, pour into the oiled dish and smooth the top with a lightly oiled rubber spatula. It will be very sticky!
    7. 7Let it sit for two-three hours, it is done setting when the top isn't as sticky and you can pull the marshmallow away from the sides of the dish.
    8. 8Now time to cut them, cover your surface with powdered sugar, and turn the marshmallow out of the dish. Cut into squares with an oiled knife and roll each square in powdered sugar.
    9. 9The marshmallows are now ready to eat! If you'd like, dip in dark chocolate and roll in freshly toasted almonds to make them extra special.
