Blue Cheese-Bacon Spinach Dip

An update on the classic spinach dip. Mine has lots of blue cheese, bacon, and horseradish to make it interesting. Serve with chips and cold beer, and you're ready to watch the game!

    Ingredients

    • 1 tablespoon olive oil
    • 1 9-ounce baby spinach
    • 1 clove garlic, minced
    • 2 8-ounce packages cream cheese, room temperature
    • 1/3 cup half-and-half
    • 1 tablespoon horseradish
    • 3/4 cup blue cheese crumbles
    • 1/3 cup walnuts, chopped
    • 8 slices bacon, cooked and crumbled
    • 1 tablespoon hot sauce
    • 1/2 teaspoon ground pepper
    • 1 tablespoon chives, chopped

    Directions

    1. 1Preheat oven to 375 degrees F.
    2. 2Heat olive oil in a large skillet. Add spinach, and cook until wilted, about 3 minutes. Add garlic and remove from heat. Chop and set aside.
    3. 3Using an electric mixer, beat cream cheese, half-and-half, and horseradish until smooth.
    4. 4Add blue cheese, walnuts, spinach, and bacon. Mix until combined. Add hot sauce and pepper.
    5. 5Spray a 9-inch pie plate with cooking spray. Add cream cheese mixture. Bake for 15 to 20 minutes, or until golden brown and hot all the way through. Garnish with chopped chives.
    6. 6Serve with chips or crackers.
