Tips & Techniques

  • High Altitude (3500-6500 ft):

    No change.

  • To easily drain off the fat, remove the mini meat loaves from muffin cups, pour off fat; return the loaves to muffin cups.

Ingredients

  • 1/2  lb lean (at least 80%) ground beef
  • 1/4  cup crumbled blue cheese (1 oz)
  • 2  tablespoons Progresso® Italian style bread crumbs
  • 2  tablespoons chopped fresh parsley
  • 2  tablespoons finely chopped red onion
  • 1/4  cup Old El Paso® Thick 'n Chunky salsa
  • 1  tablespoon purchased buffalo sauce or buffalo wing sauce

Directions

  1. 1Heat oven to 350°F. In medium bowl, mix beef, cheese, bread crumbs, parsley and onion. Press mixture evenly into 4 adjoining ungreased regular-size muffin cups at least 1 1/4 inches deep.
  2. 2Bake 20 minutes. Meanwhile, in small bowl, mix salsa and buffalo sauce.
  3. 3Remove muffin pan from oven; drain off fat. Spoon about 1 tablespoon salsa mixture over each loaf in pan.
  4. 4Return to oven; bake 10 to 15 minutes longer or until meat thermometer inserted in center of loaf reads 160ºF. If desired, sprinkle loaves with additional parsley.
