Ingredients

to 4 quarts water

live lobsters, about 1 pound each
Butter or margarine, melted, if desired
Lemon wedge, if desired

Directions

  • 1 Fill 6-quart Dutch oven or stockpot one-third full of water. Heat to boiling. Plunge lobsters headfirst into water. Cover and heat to boiling; reduce heat to low. Simmer 10 to 12 minutes or until lobsters turn bright red; drain.
  • 2 Follow directions for <A HREF="/allabout/glossary/glossp.asp?gid=40802">How to Remove Lobster Meat</A>. Serve with butter and lemon wedges.
Tips  

The melted butter served at many restaurants is often “drawn” butter, which is made by melting butter and collecting the clear oil from the water and milk solids. Melted butter is fine to use at home and may actually have more flavor than drawn butter.

When purchasing live lobsters, there are a few things you should look for. A live lobster should have a hard shell and some leg movement and will curl its tail tightly when picked up. Discard lobsters that show no movement.
