Boozy Lime Sherbet Floats

These gorgeous green, adults-only sherbet floats are boozy, pretty and refreshing too.

Ingredients

  • 1 pint lime sherbet
  • 3/4 cup tequila
  • 1/2 cup lime juice
  • 1/2 cup triple sec or Cointreau™
  • Seltzer water or lemon-lime soda, for topping off
  • Salt, for the rims
  • Fresh limes and fresh mint sprigs, for garnish

    If desired, salt the rims of each glass by rubbing with water or lime juice, then dipping in salt crystals.

    In a glass-measuring cup, combine the tequila, lime juice and triple sec (or Cointreau™). Fill each of 4 glasses with a few scoops of sherbet. Pour the tequila mixture over the sherbet, dividing the tequila evenly among all 4 glasses. Top off each glass with seltzer or lemon-lime soda.

    Garnish with fresh limes and mint.

    To make these virgin, replace the booze with an extra 1/2 cup lime juice and a 1/2 cup seltzer water or lemon-lime soda.

    For a greener float (St. Patrick’s Day!), add a drop or two of green food coloring and stir to blend evenly.

  • Move over stout beer, there's a new drink in town for St. Patrick's Day! It’s a shamrock float... only better!! My original thought for these drinks was just a simple lime sherbet shamrock float. I thought they would be perfect for St. Patrick’s Day. Then I decided that a margarita float just sounded too good not to make. Now, I know that traditionally margaritas are Mexican, but seeing as this one here is full-on green, I'm thinking it's a good bet for St. Patrick’s Day. So if stout beer is making you sigh, or you want a fun and pretty option for your St. Patrick’s Day party, here's your ticket! Cool, refreshing and decidedly perfect.
