Breakfast Pizza

Sometimes it is just fun to have eggs for dinner, and pizza for breakfast. Fresh pizza for breakfast, I might add, although leftover cold pizza is quite tasty!

    Ingredients

    • 1 Thin Crust Pizza Dough
    • 1 Can Pizza Sauce
    • 1 16 oz tub whole milk ricotta
    • 1 or 2 handsful of fresh herbs
    • 2 or 3 eggs for each pizza
    • 1 or 2 pinches salt and pepper
    • 1 or 2 other toppings of your choice

    Directions

    1. 1Prepare your dough as instructed on package.
    2. 2Heat your oven as high as it goes. How much horsepower is in that baby? 550 degrees? Great.
    3. 3Put all your toppings on your crust (except eggs) and bake for 4 or 5 minutes.
    4. 4Crack your eggs into a cup and slip them onto the pizza.
    5. 5Add some salt and pepper, maybe some red pepper flakes.
    6. 6Bake for another 5 minutes or so until the yolks are set.
    7. 7Let cool and enjoy!
