The whole family will love this bubbly casserole of broccoli and mushrooms – a hearty dinner.

Ingredients

boxes (9 oz each) frozen broccoli cuts
1
can (10 3/4 oz) condensed cream of celery or mushroom soup with 30% less sodium
1
can (8 oz) sliced water chestnuts, drained
1
jar (4.5 oz) sliced mushrooms, drained
1/4
teaspoon salt
1/8
teaspoon pepper
1
cup soft whole wheat bread crumbs (about 1 1/2 slices bread)
2/3
cup shredded reduced-fat sharp Cheddar cheese
1
tablespoon butter or margarine, melted

Directions

  • 1 Heat oven to 350°F. Spray 1 1/2-quart casserole with cooking spray.
  • 2 Cook and drain broccoli as directed on package. In medium bowl, stir together broccoli, soup, water chestnuts, mushrooms, salt and pepper. Spoon into casserole.
  • 3 In small bowl, mix bread crumbs, cheese and melted butter. Sprinkle over broccoli mixture.
  • 4 Bake uncovered 30 minutes or until bubbly and topping is golden brown.
