Ingredients

pound broccoli, cut into spears
1/4
cup butter or margarine
1/2
cup pine nuts

Directions

  • 1 Heat 1 cup water to boiling in 2-quart saucepan; add broccoli. Cook about 10 minutes or until stems are crisp-tender; drain.
  • 2 Melt butter in 8-inch skillet. Cook pine nuts in butter over medium heat about 5 minutes, stirring frequently, until golden brown. Stir pine nuts into broccoli.
Tips  

Save money by buying only the amount of pine nuts you need in the bulk section of a grocery store.

Leftover Broccoli with Pine Nuts makes a great topper for baked potatoes. You could also toss leftovers with cooked spaghetti noodles and freshly grated Parmesan cheese for a meatless main dish.
