Enjoy these fiber-rich open-face sandwiches with a bowl of steaming soup or alongside a crisp green salad.

Ingredients

2
French rolls
1/2
cup Old El Paso™ refried beans
1/4

Directions

  • 1 Set oven control to broil. Cut rolls horizontally in half. Broil cut sides up 2 to 3 inches from heat about 1 minute or until golden brown.
  • 2 Spread each roll half with 2 tablespoons beans. Sprinkle each with 1 tablespoon cheese.
  • 3 Broil with tops 2 to 3 inches from heat about 1 1/2 minutes or until cheese is melted.
Tips

Slash fat by using fat-free refried beans and low-fat cheese.

Sprinkle sandwiches with chopped fresh cilantro for both color and flavor.
