An autumn classic, this “recipe” walks you through squash prep. Cooking takes even less time when you use your microwave!

Ingredients

Acorn, buttercup or butternut squash
Butter or margarine
Brown sugar

Directions

  • 1 Cut squash lengthwise into fourths; remove seeds and fibers. Place squash, cut sides up, in baking dish; dot with butter. Top each with a little brown sugar (1 to 3 teaspoons). Pour water into baking dish until 1/4 inch deep.<P>Cover and bake until tender: 325ºF oven 45 minutes, 350ºF oven 40 minutes; 400ºF oven 35 minutes.</P> <P><B>To Microwave:</B> Pierce whole squash with knife in several places to allow steam to escape. Place on paper towel. Microwave on High 4 to 6 minutes or until squash is hot and rind is firm but easy to cut; cool slightly. Carefully cut in half; remove seeds. Arrange halves, cut sides down, on 10-inch plate. Cover and microwave 5 to 8 minutes or until squash is tender when pierced with a knife. Cut squash pieces in half. Arrange squash pieces, cut sides up, on plate. Top each with butter and brown sugar as directed above. Microwave uncovered about 1 minute or until sugar is melted and hot.</P>
