Buffalo Buffalo Burgers

Ingredients

  • 1 pound ground buffalo (or beef if you want)
  • 1/4 large onion, diced
  • 1 tablespoon tomato paste
  • 2 tablespoons hot sauce
  • 3 tablespoons unsalted butter
  • 4 ounces blue cheese
  • 1 pinch salt and pepper
  • 4 leaves lettuce (optional)
  • 4 sturdy buns

    Mix ground buffalo with tomato paste, hot sauce, diced onion, and butter. Mash the butter up so there are tiny bits of it throughout the meat. Add a large pinch of salt and pepper to the meat.

    Form four large patties with the ground buffalo mixture. Try not to press the meat too tightly together. Keep it light. Using your thumb, put a small divet in the center of each patty which will help with even cooking.

    Cook the burgers on a very hot grill for about 4-5 minutes per side. With about two minutes left to cook, add a handful of blue cheese to each patty. Optional, but delicious.

    Serve the burgers on toasted buns with a splash of extra hot sauce and some lettuce which gives the burgers a great crunch.
