Choose to grill or broil this hearty fish and slaw sandwich that's ready in 15 minutes - perfect for a Cajun dinner.

Ingredients

SLAW

cups purchased coleslaw blend (from 16-oz. pkg.)
1/4
cup reduced-calorie salad dressing or mayonnaise
2
tablespoons sweet pickle relish

FISH SANDWICHES

1 1/2
teaspoons Cajun or Creole seasoning

(about 5x3-inch) catfish fillets (3/4 lb.)
4
large sesame sandwich buns, split

Directions

  • 1 GRILL DIRECTIONS: Heat grill. In medium bowl, combine all slaw ingredients; mix well. Set aside.
  • 2 Sprinkle Cajun seasoning over both sides of catfish. If using grill basket, brush with oil. When ready to grill, place fish in basket. Place basket or fish fillets on gas grill over medium heat or on charcoal grill over medium coals. Cook 6 to 10 minutes or until fish flakes easily with fork, turning once.
  • 3 Place buns, cut sides down, on grill rack. Cook about 30 seconds or until toasted. Place fish fillets on bottom halves of buns; top each with 1/4 cup slaw. Cover with top halves of buns.
Tips  

Catfish, so named for its barbels that resemble feline whiskers, is a bottom feeder, and the wild fish is famous for its strong, "muddy" flavor. Most of the catfish you'll find in the market nowadays, however, has been farm raised and has a milder, "cleaner" flavor.

Coleslaw mix saves the tedious task of grating by hand or fussing with the food processor. It's simply a mixture of preshredded, ready-to-dress cabbage and carrots. Use the mix in a traditional slaw, spiked with raisins in a sweet orange-juice dressing, or as a quick way to expand a stir-fry.
