Snappy dinner ready in 15 minutes! Enjoy this delicious salad with chicken, Canadian bacon and lettuce tossed in homemade vinaigrette – a scrumptious meal.

Ingredients

Salad

cups torn leaf lettuce
3 1/2
cups torn romaine lettuce

boneless, skinless chicken breasts (3/4 lb), cooked, cut into bite-size pieces

oz Canadian bacon, sliced, cut into thin strips (1 cup)

medium green onions, sliced (6 tablespoons)
1
medium tomato, chopped (3/4 cup)

Vinaigrette

1/4
cup balsamic vinegar

tablespoons canola or soybean oil
1
teaspoon Dijon mustard
1
clove garlic, minced

Directions

  • 1 In large bowl, mix salad ingredients.
  • 2 In small bowl, mix vinaigrette ingredients until well blended. Just before serving, pour vinaigrette over salad; toss gently.
