Shallots reach a whole new flavor in this sweet-slightly tangy caramelized jam. Perfectly pairs with your favorite goat cheese or Brie.

Ingredients

tablespoons olive oil
4
large shallots, thinly sliced (about 1 cup)
1/2
cup packed brown sugar
1/4
cup red wine vinegar
1/4
teaspoon salt

oz chèvre (goat) cheese
Food Should Taste Good™ peppercorn blend brown rice crackers, as desired

Directions

  • 1 In 1-quart saucepan, heat oil over medium-high heat. Add shallots and brown sugar; cook about 5 minutes to soften shallots, stirring constantly. Reduce heat to medium, and cook until reduced to jam consistency. Stir in vinegar and salt. Transfer to serving bowl.
  • 2 Serve with goat cheese and crackers.
Tips  

This recipe can easily be doubled and kept in a container in the refrigerator.

Adding a few sprigs of fresh herbs gives a nice alternative flavor to this jam.
