Enjoy this salad that’s made with fruits and nuts – a tasty side dish that’s ready in just 15 minutes.

Ingredients

1/2
cup mayonnaise or salad dressing
1/4
cup whipping cream
1
tablespoon fresh lemon juice
1
tablespoon milk

medium unpeeled red eating apples, coarsely chopped (2 cups)
1
cup fresh pineapple chunks
2
medium stalks celery, chopped (1 cup)
1/2
cup coarsely chopped pecans or walnuts
1/3
cup raisins
3
tablespoons flaked coconut
1/4
cup sweetened dried cranberries
Bibb lettuce leaves or salad greens, if desired

Directions

  • 1 In medium bowl, mix mayonnaise, whipping cream, lemon juice and milk until well blended.
  • 2 Stir in apples, pineapple, celery, nuts, raisins, coconut and cranberries. Serve salad on lettuce leaves. Cover; refrigerate any remaining salad.
Tips  

Coconut and pineapple add tropical flair to the traditional Waldorf salad, which originally contained only apples, celery and mayonnaise.
