Light and fluffy orange flavored cookies that have carrots incorporated to the batter for some sneaky added nutrition.

Ingredients

  • 1 1/2 cups white sugar
  • 1 1/2 cups butter
  • 2 whole eggs
  • 2 cups mashed cooked carrots
  • 4 cups flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 2 teaspoons vanilla extract
  • 3 teaspoons orange extract, divided
  • 2 1/2 cups powdered sugar
  • 1/4 cup butter (softened)
  • 4 tablespoons milk
  • Orange food coloring

Steps

    Preheat oven to 375°F and line a cookie sheet with parchment paper.

    Cream sugar, butter, and eggs. Add cooled carrots and mix well.

    Add the flour, baking powder, and salt. Mix well.

    Add the vanilla extract and 2 teaspoons of the orange extract. Mix well.

    Bake for 10-12 minutes. Do not overbake. Remove from cookie sheet and let cool on a wire rack.

    For the Frosting: Cream powdered sugar, butter, and milk. You may just want to start with 3 Tablespoons of milk and add more if you need it. Add the remaining 1 teaspoon orange extract and orange food coloring to the desired color. Mix well.

    Frost cooled cookies.

  • I think when every man gets married, there’s an underlying comparison of his wife’s cooking to his mom’s cooking. My mother-in-law and I can both hold our own in the kitchen, but there are some things that I’m sure I will never be able to top: her homemade chicken noodle soup and her carrot cookies. Even though I have the same carrot cookie recipe that my mother-in-law has used for decades, I’m sure it’s arguable that mine are missing a cup of childhood ambiance and a teaspoon of his mother’s love. Although these are named Carrot Cookies, orange is the dominating flavor here. The cookies discreetly contain mashed carrots in batter only noticeable by the small bright flecks of orange and the added sweetness. The cookies are topped off with a creamy orange frosting that compliments the cake-like cookie perfectly. Your kids will never know they are actually eating vegetables in their cookies.
