Delicious carrot and potato patties cooked over griddle - side dish ready in 20 minutes.

Ingredients

1 1/2
medium carrots, shredded (1 cup)
1
medium potato, peeled and shredded (1 cup)
2
tablespoons grated onion
1/2
teaspoon salt
1/4
cup fat-free cholesterol-free egg product or 1 egg
1/4
cup unsweetened applesauce

Directions

  • 1 Mix all ingredients, except applesauce, in medium bowl.
  • 2 Spray nonstick griddle or 10-inch skillet with cooking spray. Heat griddle over medium heat or to 375°.
  • 3 For each patty, spoon approximately 1/2 cup batter onto hot griddle. Cook 2 to 3 minutes on each side or until golden brown. Top warm patties with applesauce.
Tips  

If you like, offer a few different topping choices for these pleasing patties such as applesauce, sour cream or sour cream mixed with chopped chives or prepared horseradish.
