Like a lot of cooks, you probably tweak recipes slightly to suit your family's tastes and diets. A little extra spice here... sub low-fat sour cream there...

In a medium bowl, combine coleslaw, red onion, radishes and cilantro.
In a separate small bowl, whisk together lime juice, honey and salt. Add to coleslaw mixture and toss together gently.
In a large Dutch oven, add vegetable oil until approximately 2 inches deep. Heat to 360 degrees F. Fry catfish strips in batches for 2 to 3 minutes or until golden brown. Drain on paper towels.
To serve, place catfish strips in tortillas. Top with coleslaw mixture.
