Crunchy veggies get a hearty protein boost from everyone's favorite combination, bacon and cheese, in this rich and creamy side dish.

Ingredients

slices bacon, cut into 1/2 inch slices

cup mayonnaise or salad dressing
1/4
cup sugar

medium head cauliflower (about 2 lb), separated into florets
1
small onion, finely chopped
1
small green bell pepper, finely chopped
8
oz Colby Monterey jack cheese, cut into 1/2 inch cubes

Directions

  • 1 In 12-inch nonstick skillet over medium heat, cook bacon pieces 5 to 7 minutes or until crisp. Drain on paper towels; set aside.
  • 2 In large bowl, stir together mayonnaise and sugar. Stir in cauliflower, onion, and bell pepper until vegetables are coated with mayonnaise mixture.
  • 3 Just before serving, stir in cheese. Sprinkle with bacon.
