Fish prep has never been so easy. These crispy-coated fillets cook quickly on the stove-top or in the oven.

Ingredients

Fish fillet, about 3/4 inch thick
Salt
Pepper
Mayonnaise or salad dressing
Wheaties™ cereal, crushed
Butter or margarine, melted (for baking fish)

Directions

  • 1 Cut fish into serving pieces. Sprinkle both sides with salt and pepper. Dip fish into mayonnaise; coat with cereal. Cook fish as desired.
  • 2 <B>To Panfry:</B> Heat 1/8 inch oil in skillet over medium heat. Fry fish in hot oil 6 to 8 minutes, turning fish once, until fish flakes easily with fork and is brown on both sides. Drain on paper towels.
  • 3 <B>To Bake:</B> Move oven rack to slightly above middle of oven. Place fish in ungreased pan. Drizzle with butter or margarine (about 3 tablespoons to 1 pound fish). Bake uncovered at 500ºF about 10 minutes or until fish flakes easily with a fork.
