With hosting Thanksgiving dinner again this year, I’m starting to feel like I’m on a countdown to liftoff when it comes to planning the menu. If things aren’t perfectly organized and thought through way ahead of time, I go bonkers. It’s the neurotic perfectionist in me, I’m sure, but it’s also the wish to have the best dinner possible ready for my family to enjoy.
Don’t get me wrong – I know that in the end, it still won’t be perfect, and yet my family will have a great time (and so will I). But avoiding all the stress prior to the big day? That is something I would like to work on. That’s where dishes like this Cheesy Bacon-Corn Casserole
I like splitting up my menu into two parts: Food that can be made ahead of time, and food that can be made day-of but with very, very little effort. This casserole falls in the latter category. In just less than an hour – and with only 15 minutes of active prep time – you can have this yummy, indulgent twist on classic creamed corn casserole on your Thanksgiving table without even breaking a sweat.
Just pop it in the oven, get your table set and your other menu items prepared, and by the time you come back, you’ll have a piping-hot, ooey-gooey, ultra-cheesy side dish with which to celebrate all your hard work.
