Cheesy Baked Buffalo Cauliflower Tots

Easy and delicious baked tots made with cauliflower and filled with cheese and buffalo sauce!

Ingredients

  • 3 cups shredded cauliflower (about 1/2 of a large head)
  • 4 oz sharp cheddar cheese
  • 1 large egg
  • 1/2 cup all-purpose flour
  • 2 tablespoons Buffalo hot sauce, plus more for serving
  • Pinch of salt
  • Vegetable oil for baking pan

Steps

    Preheat oven to 400°F. In a food processor, pulse raw cauliflower until it’s finely shredded.

    In a medium bowl, stir together shredded cauliflower with grated cheese, egg, flour, hot sauce and a pinch of salt. If the mixture is very wet and doesn’t hold its shape, add more flour by the tablespoon until desired consistency is reached.

    Lightly oil a baking sheet and measure out heaping spoonful-sized balls onto the sheet. Don’t worry too much about shaping them, but do leave some space between each ball. You should get 20-25 tots.

    Bake the tots for 15 minutes until lightly crispy on the bottom. Then flip and bake for another 15-20 minutes until very crispy. Remove tots and serve with extra hot sauce!

  • Cauliflower tots are even more tasty and are easily homemade. They're something fun for your next party – give 'em a try! Cauliflower is my new magic vegetable. I love the subtle flavor, but more importantly I love how versatile it is. It can be steamed, fried, baked, grilled, and stir-fried. But it can also be shredded and made into little tots. These are like some sort of crazy mashup between tots and veggie chips… mixed with buffalo sauce and cheese. They only have a few ingredients, but I guarantee they won’t last long and people will want the recipe! These start with just plain, raw cauliflower. No need to cook it before making the tots. If you wanted to make these gluten free you could use cornmeal or a gluten free flour like rice flour. You should get 20-25 tots per batch. Don’t worry too much about shape at this point as they'll cook into rounds no matter what. Just make sure they have some room between each tot! Serve these while warm with some extra hot sauce if that’s your thing. Who knew cauliflower could be this good?!
