Gobble up bits of broccoli covered with an easy cheese sauce and sprinkled with smoky bacon. 15-minute side!

Ingredients

pound fresh broccoli flowerets (about 6 cups)
2
tablespoons water
2
cups shredded Cheddar Jack and American cheese blend (8 ounces)
1/2
cup crumbled cooked bacon or toasted sliced almonds

Directions

  • 1 Place broccoli and water in rectangular microwavable dish, 11x7x1 1/2 inches. Cover with plastic wrap, folding back one edge or corner 1/4 inch to vent steam. Microwave on High about 5 minutes or until hot and crisp-tender.
  • 2 Drain broccoli; return to dish. Sprinkle with cheese. Microwave uncovered on High 3 to 4 minutes or until cheese is melted. Sprinkle bacon over top.
Tips  

To assure a bright green color, be sure to not overcook the broccoli. Overcooked broccoli takes on an olive color. If using almonds instead of bacon, toast them quickly in the microwave. Place almonds and 1 tablespoon butter or margarine in 1- quart microwavable casserole. Microwave uncovered on High 2 to 3 minutes, stirring after 1 minute, until golden brown.

For a festive holiday garnish, sprinkle diced pimientos over the broccoli.
