Cheesy Quinoa Jalapeno Bites

I’m a little late to the quinoa train.


I know, I know. It’s what all the cool kids have been cooking these days. And here I am stumbling in belatedly with a recipe for Cheesy Jalapeno Quinoa Bites. But you know what? I’m glad I’m finally HERE. Because this recipe is oh so delicious and so worth the wait – at least for us un-quinoa-fied folk.

So before you completely write me off the “cool kid” list (which I totally know is something everyone has), let’s get down to spicy, cheesy, quinoa-y bizniz.

 

Cheesy Jalapeno Quinoa Bites

First, gather your ingredients. The combination of shredded cheese and Progresso Recipe Starters creamy three cheese cooking sauce doubles the cheesiness and ooey-gooeyness factors in these puffy bites, while the chopped jalapeno adds crunch. The cooked quinoa adds flavor and texture that’ll BLOW YOUR MIND. Just wait and see.

If you haven’t already cooked your quinoa, now’s the time to do so. Usually about a half cup uncooked will yield a full cup cooked, but I like to play it safe and cook up a full cup uncooked and refrigerate the extra. One cannot have too much leftover quinoa because you can pretty much mix it up in anything to make a meal. It’s magical like that.

 

Adding Progresso Recipe Starters

Anyway, back to the recipe. In a large bowl, whisk together an egg and some of the creamy three cheese cooking sauce.

 

Adding shredded cheese

Then add the shredded cheese, Bisquick and the cooked (and cooled) quinoa. Stir it all together until just combined.

 

Adding a small chopped jalapeno

Add a small chopped jalapeno and fold ‘er in.

Dollop tablespoonfuls of the batter onto a prepared baking sheet. Dollop. Such a funny word.

Bake up the bites until they’re nice and golden brown and puffy.

 

Dipping a Cheesy Jalapeno Quinoa Bite

Now serve them up with a yogurt-sriracha sauce and prepare for some seriously spicy, cheesy, yummy quinoa action.

Cheesy Jalapeno Quinoa Bites

Ingredients

cup Progresso Recipe Starters Creamy Three Cheese cooking sauce
1
egg
1
cup cooked quinoa
1 3/4
cup Bisquick baking mix
1 1/4
cup shredded cheddar and/or jack cheeses
1
small jalapeno, seeded and finely chopped
1
cup Yoplait plain Greek yogurt
2
teaspoons sriracha

Directions

  • 1 Preheat oven to 375 degrees F. Line two baking sheets with silicone mats or lightly greased parchment paper and set aside.
  • 2 In a large bowl, whisk together Progresso Recipe Starters Creamy Three Cheese cooking sauce and egg until well combined. Add cooked quinoa, Bisquick and shredded cheese and stir until just combined. Fold in chopped jalapenos.
  • 3 Scoop tablespoonfuls of the batter 1-2 inches apart on prepared baking sheets. Bake until lightly brown and a toothpick inserted in the center comes out clean, about 20 minutes. Remove from oven and cool slightly.
  • 4 Stir together Greek yogurt and sriracha and serve as a dipping sauce on the side.
