Today I’m sharing this easy breakfast casserole—a great way to use up your leftover mashed potatoes. I don’t know about you, but mashed potatoes are a staple on our Christmas dinner table.
Somehow, though, I always end up making way more than I need. With potato-loving brothers that’s definitely not a problem, but over the years I’ve gotten crafty and have come up with delicious ways to use up those leftovers.
This skillet casserole is possibly one of my favorites. It has VERY minimal ingredients and is absolutely delicious!
The recipe starts with Betty Crocker™ Loaded Mashed Potatoes (or simply use leftover mashed potatoes!) and ends with eggs, bacon and so much cheddar cheese. See? Totally delicious!
Prepare the mashed potatoes as directed on the package. OR if you have leftover mashed potatoes, use 2-3 cups of those.
Sprinkle a little cheese over the mashed potatoes and then make 4-6 wells for the eggs in the mashers. Crack the eggs into the wells and sprinkle with a little salt + pepper. Add a little more cheese!
Then bake until the eggs are done to your liking.
Top with bacon and green onions.
Doesn’t that just look awesome! YUM! A perfect way to ring in the New Year too!
