Cheesy Stuffed Tomatoes

    Ingredients

    • 6 medium beefsteak tomtatoes
    • 1 1/2 cups leftover stuffing, any flavor
    • 8 oz cream cheese
    • 1 Tbs fresh parsley, for garnish

    Directions

    1. 1Warm up leftover stuffing.
    2. 2While stuffing is warming, slice cream cheese into 12 equal slices.
    3. 3Wash tomatoes. Slice off tomato tops, scoop out seeds and center pulp.
    4. 4Place one heaping tablespoon of stuffing into each tomato.
    5. 5Place cream cheese slice on top of stuffing. Press down lightly.
    6. 6Place a second heaping tablespoon of stuffing mixture into each tomato. Press down lightly.
    7. 7Finish with a slice of cream cheese on top of each tomato.
    8. 8Place tomatoes on baking sheet and broil for 3 minutes, until cheese barely starts to brown.
    9. 9Remove from oven and garnish with fresh parsley. Serve immediately.
