Chick and Veggie Mac and Cheese

Take two boxes of Mac and Cheese, add some colorful veggies, and you've got this rich, delishy dinner on your table in minutes!


box Betty Crocker™ mac & cheese original
cup purple onion, chopped
tablespoons butter
1 1/2
tablespoons flour
cup milk
cup sharp cheddar, shredded
package (7.5 ounce) rotisserie-seasoned cooked chicken breast, chopped
box (7 ounce) Green Giant™ frozen antioxidant blend broccoli, carrots and sweet peppers
tablespoon fresh parsley, chopped


  • 1 Start cooking the Betty Crocker™ Mac and Cheese pasta, according to package directions. In a large saucepan, cook the onion and butter over medium-high heat, until the onions are softened (about one minute).
  • 2 Whisk the flour into the butter mixture to form a paste. Add the cheese sauce packet from the mac and cheese, then quickly whisk in the milk and cheddar cheese. Turn the heat down to medium-low and whisk until smooth.
  • 3 Add the chicken. With the back of a knife, break the frozen Green Giant™ veggies into small pieces, then open the package and add to the cheese sauce. Heat over medium heat until veggies are hot.
  • 4 Toss cooked, drained pasta into the cheese sauce. Garnish with fresh chopped parsley, if desired.

This mac and cheese made a New Year's resolution to "friend" colorful veggies and lean chicken. Give it a try!

'Tis the season of comfort food, but as fate would have it, it's also the time of the year when we try to get our faces skinny and start eating right. Thankfully, this EZ Chick 'n Veggie Mac 'n Cheese recipe has both bases covered!

This veggie-packed mac and cheese has a little bit of pasta, a lot of chicken, and oodles of veggies to make your New Year’s extra tasty this year. Let's get cookin', shall we?

Ingredients for veggie and chicken mac and cheese.

La la laaaaa! Any ingredient roundup this easy is a roundup we want in our life. Grab, snag, and prepare to fab!

Saute butter, flour and onion.

So you're going to start cooking the pasta from a box of Betty Crocker Mac and Cheese, and while that's happening on one burner, you're gonna heat up a skillet with butter on the other burner. Add purple onions to this skillet, because they're pretty.

Add cheese from the cheese sauce packet.

Now it's time to make us a roux. Basically, to make a good roux, we need butter and flour turned into a paste. Only we're gonna get extra snazzy this time and add milk and that packet of cheese sauce from your box of mac and cheese. Why? Because we're awesome like that.

Add cheddar cheese and whisk until smooth.

This is when it gets all happy up in here, because more cheese.

Add frozen veggies.

Add those veggies! Toss in some chopped chicken, too.

Add chicken and stir until hot.

Now you're gonna grab that pasta that's been all cooked up and tenderized.

Veggie and chicken mac and cheese ready to serve.

Once the macaroni is stirred into the sauce, you're gonna need some bowls!
