Enjoy these stress-free bagel sandwiches made using chicken and apricots with mayonnaise dressing – ready in 15 minutes.

Ingredients

(5-oz.) can chunk white chicken breast in water, drained
1/3
cup chopped dried apricots
1/4
cup chopped celery

tablespoons sliced green onions
2
teaspoons shelled sunflower seeds
Dash pepper

cup fat-free mayonnaise or salad dressing

bagels, split

Directions

  • 1 In small bowl, combine all ingredients except bagels; mix well. Fill each bagel with about 1/3 cup chicken mixture.
Tips  

Whole wheat or raisin bagels are especially good with the fruited chicken.

You can use poached or boiled chicken or even leftover roasted poultry in this recipe.

Prepare the chicken salad up to a day ahead of time, but stir in the sunflower seeds at the last minute so they don't get soggy.
