Ingredients

  • 3 cups cooked and shredded chicken
  • 6 oz cream cheese, softened
  • 1/2 cup green salsa
  • 2 tablespoons sliced green onions
  • 1/2 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/4 cup chopped cilantro
  • 8 - 10 (6 inch) flour tortillas
  • Oil for frying
  • For sour cream and salsa dipping

Steps

    In a medium bowl combine all the ingredients except for the tortillas. Blend well.

    Place 1/2-1/4 cup of chicken mixture down the lower third of the tortilla and roll up tightly. Place seam side down on a plate. repeat with remaining tortillas.

    In a skillet pour enough oil so that the entire bottom of the pan is coated. When oil is warm carefully place one or two taquitos seam side down in the oil and cook for 2-3 minutes per side or until browned.

    Let taquitos slightly cool and slice in half to serve. Dip in salsa and sour cream.

  • These aren't the taquitos you're used to! Creamy, decadent and filling ... and super easy, too! When I think of taquitos, I usually think of small skinny rolled up tortillas with a tiny bit of meat barely detectable inside. It takes about five of the little ones to make me feel like I've even started eating. Not these babies! These Chicken and Cream Cheese Taquitos are made with full size tortillas and are stuffed to the fullest with a creamy and spicy chicken mixture. I like to brown mine in a pan with a little oil to get them golden and crispy on the outside so that contrasting creamy center is even more delightful. Dip 'em Usually taquitos are served up as appetizers -- but since these are so hearty, they could totally be the main meal. Slice them in half or leave them whole -- either way they’re great for dipping. Make a dipping bar with sour cream, guacamole, and salsa for an interactive meal with your friends. Freezer Friendly These taquitos are great for making ahead and storing in the freezer so that you can pull them out for a quick and easy meal. Just prepare them as directed and then freeze them. Reheat them in the oven for about 15-20 minutes at 350 degrees and dinner is done!
