Kale in a taco? This taco is short on time, but big on flavor, and it looks gorgeous on the dinner table with all the bright fresh colors.

Ingredients

boneless skinless chicken breasts (1 1/4 lb), cut into small cubes
4
cups chopped curly green kale (from 1-lb bag)
1
package (1 oz) Old El Paso™ taco seasoning mix
1
Old El Paso™ Taco Boats™ Soft Flour Tortillas
1
cup mango salsa
1/2
cup Yoplait® Greek 100 plain yogurt, if desired

Directions

  • 1 Heat 10- to 12-inch nonstick skillet over medium-high heat. Add chicken; cook 2 minutes. Add kale; cook 2 minutes longer, stirring constantly. Add taco seasoning mix; cook about 2 minutes or until kale is wilted and chicken is cooked through.
  • 2 Divide chicken mixture among tortillas. Top with mango salsa and yogurt.

Tips  

If you have a hard time finding mango salsa, simply make your own! In medium bowl, mix 1 ripe mango, seed removed, peeled and diced, with 1/2 jalapeño chile, seeded and diced, 2 tablespoons chopped red onion and 2 tablespoons chopped fresh cilantro.
