Chicken and Pesto Pasta

A delicious and healthy pasta with chicken, sundried tomatoes, and pesto.

Ingredients

  • 1 (16 ounce) package bow tie pasta
  • 1 teaspoon olive oil
  • 2 cloves garlic, minced
  • 2 cups boneless skinless chicken breast, cut into 1 inch pieces
  • 1/4 teaspoon crushed red pepper flakes
  • 1/3 cup oil-packed sun-dried tomatoes, drained and cut into strips
  • 1/2 cup Progresso™ refrigerated original basil pesto

Steps

    Bring a large pot of salted water to a boil. Add the bow tie pasta and cook for 8 to 10 minutes or al dente. Drain the pasta.

    Heat the olive oil in a large skillet. Add the garlic and cook for one minute. Add the chicken and the red pepper. Cook the chicken until it is about 4-5 minutes or until done.

    In a large bowl combine the cooked pasta, sun-dried tomatoes, and pesto. Toss until coated evenly.

    My dishwasher is broken. Supposedly they’ve ordered a part and it will be fixed next week. I had no idea how spoiled I was by modern day appliances. Now, I have no motivation to cook. I love cooking but dishes, don’t love those.

    I told my husband I was NOT cooking dinner until it was fixed. But after a couple nights of eating out, I realized I would rather hand wash dishes from four Thanksgiving dinners than have to control my children out at a restaurant. Not to mention that I tend to eat soooo much more when I go out to eat. Swimsuit season is almost here and I have some baby weight I’m still trying to drop.

    People have a misconception that pasta is completely off limits when you’re trying to watch what you eat. Absolutely not! The key is portion control and sticking to lighter sauces.

    This Chicken and Pesto Pasta is healthy, easy, and most important to me right now….does not leave a pile of dishes in the sink. This pasta is infused with garlic, chicken, and flavorful sun-dried tomatoes and then tossed with some pesto all in one pot.

    I love this basil pesto from Progresso. I’ve tried a lot of pestos and this one is by far my favorite.

    There you have it; an easy and light pasta around 330 calories.

    You can’t beat that!
