With a little help from a chicken & rice mix you can put this colorful, veggie-packed dish on the table in 20 minutes!

Ingredients

tablespoons butter or margarine
1
pound boneless skinless chicken breast, cut into 1-inch pieces

package Chicken Helper™ chicken & herb rice
2 3/4
cups hot water
2
tablespoons soy sauce
1
tablespoon packed brown sugar
1
tablespoon crunchy peanut butter
1
bag (1 pound) frozen broccoli, red peppers, onions and mushrooms, thawed

Directions

  • 1 Melt butter in 10-inch skillet over high heat. Cook chicken in butter 3 to 5 minutes, stirring occasionally, until outside turns white.
  • 2 Stir in uncooked Rice, Sauce Mix and hot water. Heat to boiling, stirring occasionally. Reduce heat; cover and simmer about 9 minutes, stirring occasionally, until most of liquid is absorbed.
  • 3 Stir in soy sauce, brown sugar and peanut butter until peanut butter is melted; stir in vegetables. Heat to boiling, stirring frequently. Stir before serving.
Tips  

Store brown sugar tightly sealed to prevent caking.

If you can't find the veggie blend called for here, go ahead and use any frozen stir-fry blend.
