Italian dinner ready in 20 minutes! Enjoy breaded chicken breasts, spooned with spinach and mozzarella cheese – a mouth-watering dinner.

Ingredients

(9-oz.) pkg. frozen spinach in a pouch

tablespoons butter, melted
4
boneless, skinless chicken breast halves
1/3
cup plain bread crumbs
1/4
teaspoon dried basil leaves

tablespoons oil

oz. (1/2 cup) shredded mozzarella cheese

Directions

  • 1 Cook spinach as directed on package; squeeze to drain. Stir in butter; set aside.
  • 2 Meanwhile, place 1 chicken breast half between 2 pieces of plastic wrap or waxed paper. Working from center, gently pound chicken with flat side of meat mallet or rolling pin until about 1/4 inch thick; remove wrap. Repeat with remaining chicken breast halves. In shallow bowl, combine bread crumbs and basil. Coat chicken breasts with crumb mixture.
  • 3 Heat oil in large skillet over medium-high heat until hot. Add chicken breasts; cook 5 to 7 minutes on each side or until lightly browned, fork tender and juices run clear. Reduce heat to low. Spoon cooked spinach evenly over each chicken breast half; sprinkle with cheese. Cover; cook until cheese is melted.
Tips  

Many dishes that contain spinach have come to be described as "Florentine." This name is borrowed from the French term à la Florentine, which means "in the style of Florence" and is used to describe a dish that's served over spinach and topped with a creamy cheese sauce.

Spinach, like other dark leafy greens, is a good source of vitamin A. In this recipe, it provides 50 percent of the Daily Value for vitamin A.

Serve the spinach-filled chicken on a bed of mushroom-flecked rice along with steamed spaghetti squash and garlic bread. End the meal with fresh fruit, Italian cookies and espresso.
