No need for French cooking lessons to make this quick and easy version of Cordon Bleu!

Ingredients

package Chicken Helper™ Oven Favorites® potatoes au gratin
2
tablespoons margarine or butter, cut up or softened
3 1/4
cups boiling water
1
jar (2.5 or 4.5 ounces) sliced mushrooms, drained

slices process American or Swiss cheese
1
pound boneless skinless chicken breast halves
8
thin slices fully cooked ham

Directions

  • 1 Heat oven to 400°F for any type 13x9-inch pan. Stir uncooked Potatoes, Sauce Mix, margarine, boiling water and mushrooms in ungreased pan until margarine is melted.
  • 2 Place 1 slice cheese around each chicken breast; wrap 2 slices ham around cheese and chicken. Place chicken in pan. Tear off notched corner of Au Gratin Cheese Sauce Topping pouch. Squeeze cheese sauce over each chicken breast.
  • 3 Sprinkle bread crumb Topping over cheese-topped chicken. (If using metal pan, be careful when placing in oven--it will be hot.) Bake uncovered 30 to 35 minutes for glass, dark or nonstick pan, 33 to 38 minutes for shiny metal pan or until potatoes are tender and juice of chicken is no longer pink when centers of thickest pieces are cut.
Tips  

Traditional "cordon bleu" sandwiches thin slices of prosciutto ham and Swiss cheese between thin slices of veal or chicken, then is breaded and sautéed until golden. This simplified version gives you similar flavors and potatoes, too!

If you use your oven frequently, having a good pair of oven mitts or pot holders on hand is a great way to avoid burns from oven racks or pans. Be sure to snip off any loose threads.
