Chicken, Cranberry and Goat Cheese Salad

For the chicken, you can use precooked cuts or even breasts from a rotisserie chicken from your local grocery. Serve with a sweet vinaigrette like honey balsamic.

    Ingredients

    • 8 cups mixed lettuces, torn into small pieces and washed
    • 1 lb cooked chicken breast
    • 1/2 small red onion, thinly sliced and quartered
    • 1/4 cup dried cranberries
    • 1/4 cup kalamata olives
    • 4 ounces crumbled goat cheese (feta may be substituted in)
    • 1/4 cup vinaigrette (choose a sweet variety)

    Directions

    1. 1Divide the lettuce evenly among four plates.
    2. 2Slice the chicken breasts (these should be precooked) into 1/2 inch thick slices. Divide them among the plates
    3. 3Top each salad with 1/4 of the red onion, dried cranberries, kalamata olives and goat cheese.
    4. 4Drizzle with vinaigrette and serve.
