an international update with Thai flavors of curry, pineapple, and coconut. This dish comes together in a snap, but you can save even more
time by using leftover chicken or rotisserie chicken.
Not only is it a huge crowd-pleaser, this easy salad is a great make-ahead dish for your next party. In fact, it’s even better
the next day when the flavors have time to sit and combine.
My favorite thing about this salad is that it’s SO versatile! You can:
-- Serve it as-is and watch it disappear
-- Turn it into appetizers by placing spoonfuls in premade baked phyllo cups (found in the freezer aisle of your local grocery store)
-- Grab some fresh croissants and serve it as flavorful sandwiches
-- Spoon heaping tablespoons onto large romaine lettuce leaves and roll into lettuce wraps
