    Ingredients

    • 1 15 ounce can black beans, rinsed and drained
    • 1 14.5 ounce can diced tomatoes, drained
    • 1 15 ounce can corn, drained
    • 1/2 cup chopped onion
    • 1 10 ounce can enchilada sauce
    • 1 10.75 ounce can cream of chicken soup
    • 1 cup milk
    • 4 (4 ounce) chicken breasts
    • 1 cup shredded Pepperjack cheese
    • 1 cup shredded cheddar cheese
    • avocado, (optional) sour cream, and tortilla chips for topping

    Directions

    1. 1In a crockpot, combine drained beans, drained tomatoes, corn, enchilada sauce, soup, and milk. Give it a quick stir.
    2. 2Add chicken breasts. Make sure to push them down so they are submerged in the liquid.
    3. 3Cover and cook on low heat for 6 to 8 hours or on high for 3 to 4 hours.
    4. 4Before serving take out chicken breasts, shred them, and return them to the soup. See Tip below for shredding chicken.
    5. 5Stir in shredded cheeses. Top with avocado, sour cream, or crushed tortilla chips if desired. adapted from www.tasteandtellblog.com
    6. 6Tip: Instead of tediously shredding chicken, use a hand mixer and beat the warm chicken in a large bowl. It shreds so easily this way.

    Looks delicious, but what I like most is the tip for using a hand mixer to shred the chicken. Will definitely use that in the future. I don't like using soup when I cook, too much sodium, but will try some of the other posters' suggestions.

    I was just looking at crock pot recipes when I see this one of yours. Believe it or not I have one in my crock pot right now that is so very simular. I don't have cream of chicken soup in mine. I have hot and mild salsa and mexican corn in mine. It is surly a hit at my house. With me being disable it is so nice to be able to make a meal just by opening a few cans.

    Anonymous, when I made this, I cooked the chicken the night before w/ a little bit of water, onion, dash of sage, and salt/pepper. The next morning I put the rest of the ingredients in without the cream of chicken soup, and it was REALLY good! :) You might try that. That way you don't have to deal w/ the gluten.

    I added a half can more of enchilada sauce. This recipe was so good and it doesn't take much to fill you up and keep you full. Lots of leftovers too :)

    I made this over the weekend and WOW! Everyone absolutely LOVED it! I even gave some to my boyfriend and his daughter tried it and kept coming back for more. I will be makin this again, for sure!

    @ovenmitt2, Yes, boneless skinless chicken breasts. I guess I shouldn't assume that's what everyone uses :)
