Good things still come in small packages! This chicken salad made just for two is a fresh blend of chicken, fruit and a hint of mint.

Ingredients

1/3
cup plain fat-free yogurt

tablespoons mayonnaise or salad dressing

cup cubed cooked chicken
2/3
cup seedless green grapes
1
large fresh peach, chopped (3/4 cup)
1
medium celery stalk, diced (1/2 cup)
1
teaspoon chopped fresh mint leaves or 1/2 teaspoon dried mint leaves

Directions

  • 1 Mix yogurt and mayonnaise in medium bowl until smooth. Stir in remaining ingredients.
  • 2 Cover and refrigerate at least 30 minutes until chilled.
Tips  

Slash fat by using chicken breast meat only and fat-free mayonnaise or fat-free salad dressing.

Use 1 cup cooked shrimp or cubed ham for the chicken for another great salad.
