This chicken salad made just for two is a fresh blend of chicken, fruit and a hint of mint for a juicy dinner.

Ingredients

1/3
cup plain fat-free yogurt

tablespoons fat-free mayonnaise or salad dressing

cup cubed cooked chicken breast

cup seedless green grapes

large peach, chopped (3/4 cup)

medium stalk celery, diced (1/2 cup)

teaspoon chopped fresh or 1/2 teaspoon dried mint leaves

Directions

  • 1 In medium bowl, mix yogurt and mayonnaise until smooth. Stir in remaining ingredients.
  • 2 Cover and refrigerate at least 30 minutes until chilled.
Tips  

Place Bibb lettuce leaves in the bowls before dishing up each serving of this fresh salad.
