Easy homemade poppy seed dressing brings together pasta, lots of chicken, fresh cucumbers and sweet grapes.

Ingredients

  • 1 package (16 oz) pasta (such as shells, penne or rotini)
  • 1 1/2 cups cubed cooked chicken
  • 1 whole Hothouse cucumber, chopped
  • 1 cup red grapes, halved
  • 1/4 cup sugar
  • 3/4 teaspoon mustard powder
  • 1/2 teaspoon salt
  • 2 tablespoons apple cider vinegar
  • 1/3 cup olive oil
  • 1 tablespoon poppy seeds

Steps

    Bring a large pot of salted water to a boil then cook pasta according to package directions. Drain then rinse under cold water until cool.

    Add pasta, chicken, cucumber and grapes to a bowl.

    Make the dressing by whisking together the sugar, mustard powder, salt, vinegar, olive oil and poppy seeds until blended. Pour dressing over pasta and toss.

    Cover and refrigerate at least 15 minutes. Serve.
