    Ingredients

    • 1 chicken breast, poached and diced
    • 1 (14.5 oz) can cream of chicken soup
    • 1 cup frozen mixed veggies
    • 1 cup shredded cheddar cheese
    • 1 Tbs Herbs De Provence
    • 1 tsp onion powder
    • 1 tsp garlic salt
    • 2 (10 oz) cans Pillsbury biscuits

    Directions

    1. 1Preheat your oven to 400.
    2. 2In a large bowl, combine the cooked chicken, cream of chicken soup, frozen veggies, cheese, herbs and spices.
    3. 3Lightly grease a 12-cup muffin tin and place the Pillsbury biscuits into each cup, pressing into the bottom and up the sides.
    4. 4Evenly spoon the pot pie mixture into each biscuit cup. Slide into the oven and bake for about 15 minutes. Check at the 12 minute mark.
    5. 5Let rest for about 3 minutes and dig in!

    Did not enjoy these at all. The herbs etc were overpowering and I typically like a lot of seasoning in dishes. Not good at all. My husband didn't like then either. :(

    We tried these today and even my picky husband loved them. These are a wonderful option for us because I'm a vegetarian and my husband isn't so I made half with chicken and half without. Easy! I have to say I did find them a little salty so I would use garlic powder instead of garlic salt next time. I'd probably cut down the seasonings all together like others have mentioned. Yummy

I did think the recipe's porportions are way off though. I only used 1 can of jumbo biscuits, just adding pieces of dough to make the portion sizes I need. Ended up with 12 pot pies. I thought the seasoning was okay, although I only used half of what the recipe calls for, and still thought it tasted a bit like thanksgiving stuffing. I liked it though, I'll certainly consider making it again...just be a little wary of how many herbs you add to it, you might not want the whole tablespoon.

Next time I will only use a tsp or none at all. These would be so simple to make your own version. Great dish for kids or someone short on time.

    I am going to try this tonight! My 84 y/o Dad is a very picky eater and I am always trying to find something I can make up for him that he can just microwave and eat since Mom died. This sounds like just the thing. I'll be changing the garlic salt to celery salt, though, and sweet basil in stead of the Herbs de Provence... Thanks!

    My boyfriend and I loved this! I first bought the regular sized biscuits and after putting the first one in I thought it wasn't going to be big enough. So I went and bought the Grand size biscuits which worked perfectly. The regular size one that I kept did work as well, just a lot smaller, obviously. But all in all, it's an awesome quick dinner!

    Thanks for trying out our recipe! I just happened along this blog for a link to easy toddler recipes and noticed this was from our site originally. I usually bump up the spices too! I encourage you to try the updated recipe with homemade biscuits made from greek yogurt.     If you have trouble trying to get the biscuits to stretch out I took a coffee cup flipped it upside down and just spread it over the bottom then transfers it to the muffin tin, much easier!!!

    I had leftover potatoes, carrots, celery & onion from a rost earlier in the week. I added some frozen corn & peas. I also saved 1/4 cup of the cheese to sprinkle on top of each cupcake. SOOOOO DELISH!
