Chicken Taco Calzones

What could be better than a taco? An extra cheesy chicken taco calzone!

Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground chicken
  • 1 sweet onion, chopped
  • 3/4 cup water
  • 1 packet (1 oz) Old El Paso™ Original Taco Seasoning Mix
  • 2 cans (13.8 oz) refrigerated Pillsbury™ Classic Crust Pizza Crust
  • 2 cups shredded Mexican cheese
  • 1 can (16 oz) Old El Paso™ Traditional Refried Beans
  • 1 cup Muir Glen™ organic medium salsa or spicy tomato sauce
  • 1/2 cup chopped tomatoes
  • 1/4 cup chopped jalapeños
  • 1/4 cup chopped cilantro
  • 1 cup fresh lettuce
  • 1/3 cup sour cream

    Preheat oven to 425°F. Line a baking sheet with parchment paper.

    Heat the olive oil in a large skillet over medium heat. Add the ground chicken and chopped onion. Brown completely, breaking up the meat as you go. Once the meat is browned throughout and the onions are soft, add the water and taco seasoning. Give everything a good stir and simmer until the liquid has evaporated. Remove from heat.

    Unroll the pizza dough and cut it into 4 squares. Fold the corners over so you create an oval shape. Working on one half of the oval, spread some cheese. Now top with taco meat, refried beans, salsa and then more cheese. Fold the top half of the dough over the filling and pinch the seams together with your fingers to seal the filling inside. Place on the prepared baking sheet. Repeat with the remaining dough.

    Bake the calzones for 20-25 minutes or until light golden brown on top. Remove from the oven and top each calzone with fresh tomatoes, jalapenos, cilantro, lettuce and sour cream.

    The calzones can be prepared in advance and then baked right before serving. Top as directed.

    The calzones can be baked, cooled and then frozen for a quick weeknight meal. Just place the frozen calzones in the oven at 350ºF and bake 20-30 minutes or until warmed through.

    Here are your star ingredients.

    Brown the taco meat, sauté the onion and add the Old El Paso taco seasoning.

    Fold the corners over so you create an oval shape.

    Working on one half of the oval, first spread some cheese.

    Then top with taco meat, refried beans, salsa and then more cheese.

    Fold the top half of the dough over the filling and pinch the seams together to seal the filling inside.

    Place on the prepared baking sheet.  Repeat with the remaining dough.

    Bake the calzones for 20-25 minutes or until lightly golden on top.

    Remove from the oven. Yum!

    To serve, top each calzone with fresh tomatoes, jalapenos, cilantro, lettuce and sour cream. 

    So cheesy, slightly spicy and simply delicious!
