Ingredients

  • 2  tablespoons margarine or butter
  • 1  cup uncooked regular long grain rice
  • 1  cup frozen green peas
  • 1/2  cup coarsely broken uncooked vermicelli (about 2-inch pieces)
  • 1/4  cup chopped red bell pepper
  • 2 1/2  cups water
  • 1/2  teaspoon garlic salt
  • 1/4  teaspoon pepper
  • 1  can (4 ounces) mushroom stems and pieces, drained
  • 2  teaspoons chicken bouillon granules
  • 4  bone-in chicken breast halves (about 1 1/2 pounds)
  • 1/4  cup grated Parmesan cheese

Directions

  1. Heat oven to 350º. Heat margarine in ungreased rectangular pan, 13x9x2 inches, in oven until melted. Mix remaining ingredients except chicken and cheese in pan. Arrange chicken breast halves on top. Cover and bake 45 to 50 minutes or until juices of chicken run clear. Sprinkle with cheese.
