Here's a family-pleasing healthy one-skillet sensation you can make in a pinch. Serve with plain cooked rice to soak up all the juices from the spicy sweet warm corn salsa.

Ingredients

lb. fresh turkey breast tenderloins, cut crosswise into 1/2-inch slices

teaspoon salt

teaspoon cumin

cup frozen whole kernel corn (from 1-lb. bag)

cup chunky-style salsa
1/4
cup raisins
1/4
cup chili sauce
1/4
cup water

Directions

  • 1 Sprinkle turkey slices with salt and cumin.
  • 2 Heat 10-inch nonstick skillet over medium-high heat until hot. Add turkey; cook 2 to 4 minutes or until browned on both sides.
  • 3 Add corn, salsa, raisins, chili sauce and water; mix well. Reduce heat to low; cover and simmer 8 to 10 minutes or until turkey is no longer pink in center and corn is hot, stirring occasionally.
Tips  

For quick prep, look for disposable cutting sheets, available in packages of about 20, near the paper products at the discount or grocery store. These sheets are perfect for messy jobs like cutting meat. Just toss the used sheet when you're done!
