Ingredients

  • 2 tablespoons olive oil
  • 1 lb ground chicken (or beef)
  • 1 whole red pepper, chopped
  • 1 whole jalapeño, seeded + chopped
  • 1 package ( or 2 rounded tablespoons) taco seasoning
  • 3/4 cup water
  • 2 cans (4 oz) Old El Paso™ Chopped Green Chiles, minced (use one for less heat)
  • 4 oz cream cheese, at room temperature
  • 1 cup sharp cheddar cheese, shredded
  • 2 cans (8 oz) refrigerated Pillsbury™ Original Crescent Rolls (8 Count)
  • 1 cup lettuce, chopped (optional)
  • 1 cup guacamole (optional)
  • 1 cup salsa (optional)
  • 1/2 cup fresh cilantro, chopped (optional)
  • 1/4 jar (12 oz) Old El Paso™ Hot Jalapeño Slices (optional)
  • 1 chipotle chile (in adobo sauce, from a can), minced

Steps

    Heat a large skillet over medium heat and add 1 tablespoon olive oil. Once hot add the ground chicken and cook for about 5 minutes or until chicken is browned throughout. Use a wooden spoon to break the meat up as it cooks.

    Add another tablespoon of oil, the chopped red pepper and the chopped jalapeno. Cook another 3 minutes and then add the water, taco seasoning and minced chiles. Stir to combine and let the mixture bubble until all the water has evaporated, stirring occasionally.

    Remove from the heat and stir in the cream cheese and 1 cup shredded cheddar cheese. Set aside to cool slightly.

    Open the tubes of crescent rolls and separate each roll into four rectangles (pinch the seems of 2 two triangles together to make rectangles). Lay the rectangles on a parchment lined or nonstick baking sheet to form a large circle.

    Spoon chicken mixture into the center of the crescent dough ring. Fold the top of each crescent dough rectangle over the chicken filling, pressing into place to secure the dough all the way around the filling.

    Bake in preheated oven at 375°F for 15-20 minutes, or until golden brown. Let cool 5 minutes and then fill the center with lettuce, guacamole, salsa, pickled jalapenos and a sprinkle of cilantro and shredded cheddar cheese. Slice and serve!

Time for playoffs and – the big game!! Which in my mind means one thing only. Darn good, cheesy, spicy, football food. Oh yes, the cheesier and the spicier the better. Honestly, chipotle peppers are one of my favorite flavors and favorite ingredients to cook with. So the idea of a chipotle chicken taco ring pretty much just blew my mind. I mean, what could be better for a game-day party than this killer ring? Not much! And it is so easy to make. You only need a few ingredients and some awesome toppings to get this on the table just in time for the game. When the ring comes out of the oven, let it cool five minutes and then fill the center up with lettuce, guacamole, salsa, more cheddar cheese and some pickled jalapenos. Slice and serve. People will go nuts for this!
